This post is sponsored by Wellshire Farms. As always, all of the thoughts and opinions are my own and I am grateful to work with brands that I support.

There is something really special about this time of summer, don’t you agree? There are so many beautiful fruits and vegetables available in season and there’s this feeling of gratitude as we begin to realize that summer will soon start slipping away.

But I also know that there’s something I particularly dread this time of year: cooking when the temperatures continue to soar and my kitchen is the equivalent of a hot sauna.

Thankfully though, putting together simple summer meals that require little to no cooking are incredibly easy to do thanks to all of the delicious produce available right now. That’s why for the rest of August I’ll be sharing with you my favorite no-cook recipes perfect for those days when the thought of turning on the stove (or oven or even the grill) makes you cringe.

To start things off, I’m sharing this recipe that celebrates deliciously sweet, juicy summer peaches with this Summer Peach, Tomato & Virginia Ham Salad. It’s refreshing yet satisfying and comes together in less than 15 minutes!

Something that makes no-cook meals even easier to put together is using high-quality and delicious ingredients. That’s why I love using Wellshire’s Virginia Brand Uncured Seasoned Ham Nugget in this summer salad along with super fresh peaches and cherry tomatoes.

Wellshire Farms is committed to using only humanely raised animals and high-quality, minimal ingredients in their products. Their Virginia Brand Ham Nugget is subtly seasoned with honey and is fully cooked which means it’s perfect for your no-cook summer meals. I also really like that they are smaller than a full-sized ham and perfect for using in sandwiches for lunch!

All mixed up: this salad only has 10 ingredients and is ready in under 15 minutes but is packed with summer flavors!

Light and refreshing, this salad gets a little heat from a simple dressing made with a chopped jalapeño. The little bit of heat goes well with the combination of sweet peaches, juicy tomatoes and honey smoked ham but if you’re not a fan of spicy food, don’t worry, you can simply remove the jalapeño and the dressing will still be delicious!

While this simple summer salad is great for a no-cook weeknight dinner, it also is the perfect salad to bring to your next summer party or get together when you need a break from all of the burgers or potato salad.
